I don’t know about you, but when a chocolate craving hits, it’s nice to have something on hand that’s not only satisfying, but also delivers good-for-you nutrition in the same bite. Enter Blended Chocolate Chia Protein Pudding!

This chia seed pudding is blended in a high speed blender or food processor, making it smoother and more digestible than traditional chia seed pudding. Yes, chia seeds are little powerhouses of protein, omega-3’s and fiber. But guess what? Your body is going to absorb a lot less of that good stuff if the seeds are whole. Blending them makes all those nutrients more bioavailable. Plus, you won’t have to deal with random chia seeds being stuck in your teeth after you eat it (don’t know about you, but not a fan of the surprise chia seed, lol).

Why Chia Seeds?

Chia seeds are native to Mexico and Guatemala. They were first cultivated by the ancient Aztecs and Mayans who considered them a valuable food source. The name “chia” comes from the Mayan word “chiabaan,” which means “strength.” This makes sense, as they were used as a source of energy and sustenance for their warriors.

Ancient warriors attributed their stamina to chia seeds. Chia seeds absorb thirty times their weight in water and can expand up to ten times their original size when soaked in water. This helps regulate body fluid levels and retain electrolytes– perfect for sustaining hydration and energy throughout battles!

Today, chia seeds are commercially grown in Mexico, Guatemala, Bolivia, Argentina, and the United States. They are widely available in most grocery stores and online, making them an accessible and healthy option for anyone looking to add them to their diet.

How to Customize This Chia Pudding Recipe

  • You can make this recipe yours by using any type of milk you prefer: cow, coconut, cashew, etc.
  • Use whatever chocolate protein powder you have on hand. I like Paleo Valley’s Chocolate Bone Broth Powder
  • Adjust the sweetener to your liking- depending on how sweet your protein powder is, you may want to add more and less sweetener

Blended Chocolate Chia Protein Pudding

This rich chia seed pudding is made by blending chia seeds, cocoa powder, protein powder and coconut milk together to achieve a smoother texture than traditional chia seed pudding. Packed with healthy omega-3's, protein and fiber, this pudding is a great alternative to processed desserts!

Equipment

  • food processor or high powered blender

Ingredients
  

For the pudding:

  • 1 13.5 oz can full fat coconut milk (or milk of choice)
  • 1/3 cup chia seeds
  • 1/4 cup chocolate protein powder
  • 2 Tbsp unsweetened cocoa powder
  • 1-2 Tbsp maple syrup or honey
  • 1 tsp vanilla extract (optional)

Garnish:

  • fresh raspberries or strawberries
  • pumpkin seeds

Instructions
 

  • Place the pudding ingredients into a high speed blender or bowl of a food processor and blend until creamy, about 1-2 minutes: 1 can full fat coconut milk (or milk of choice, 14 oz), 1/3 cup chia seeds, 1/4 cup chocolate protein powder, 2 Tbsp unsweetened cocoa powder, 1-2 Tbsp maple syrup or honey, 1 tsp vanilla extract (optional).
  • Pour the blended mixture into a bowl, cover and refrigerate for 4 hours.
  • Spoon into serving bowls, and garnish with fresh berries and pumpkin seeds.

Notes

This pudding will keep in the fridge, covered, for up to 5 days. Toss at the first sign of spoilage.
